Leek and mushroom quiche

Is it a quiche or a tart?

The debate between quiches and tarts, but why do you call it quiche and not tart. Well, apparently according to my research on the internet, we say quiche when the preparation is made from eggs and milk. And tart is made from pastry, puff pastry, shortbread dough from which we add sweet or salted ingredients.

what-you-need

One puff pastry
2 leeks
500g of mushroom
150g of smoked lardon
2 eggs + 1 yolk
20 cl of whipping cream
10 cl of milk
1/2 tsp of nutmeg
salt, pepper

how-to

Pre-heat oven to 200°C

Slice thinly the leeks and the mushrooms. Cook the leeks in a frying pan with some butter, once the leeks are soft, cook the mushroom together. Set aside.

Then cook the smoked lardons, then set aside on kitchen towel in order to absorb the fat.

Put the puff pastry into a tart pan. Spread the leeks, the mushrooms and the lardons inside.

Mix in a bowl the eggs, the yolk, the milk and the cream. add some salt, pepper and nutmeg.

Pour this preparation on the leeks and put in the oven to 180°C during 30min.

Personally, it is better the day after, served with a green salad.
