Laotian Nem Thadeua ~ Lao Crispy Rice Salad

A small detour in Laos, the country of my origins. Let me introduce you Nem Thadeua, Lao Crispy Rice Salad, a typical Laotian dish. A kind of crispy rice salad, which we often find in large family gatherings. A refreshing dish, lightly spicy and crispy.

It is really good and simple to prepare.

what-you-need

For the crispy rice
2 cup of cooked thai rice
1 egg + 1 yolk
1 onion
2 shallots
100g minced pork
2tbsp of red curry paste
2tbsp of grated coconut
1tsp of salt
Cooking oil

For the rice salad
About ten crispy rice ball
200g of nem chua (Vietnamese fermented pork sausage)
5 branches of coriander
About ten leaves of mint
2tbsp of nuoc mam
1 lime
1tsp of salt
2tsp of pepper
Some grilled crush peanuts

how-to

Cut the onion and the shallots in small dice. Set aside in a bowl. Mix them with the cooked rice, the eggs, the minced pork, the red curry paste, the grated coconut and salt.

Mix well, then shape them like small bowl of medium size. Fry them until golden and crispy. Once it is cooked, let them cool.

In another bowl, break up the nem chua. Add the coriander and the mint finely chop. the lime juice, the nuoc man, salt and pepper.

Mix well everything. You can add some grilled crush peanuts on the top of it.

Serve !
