Rings of calamari (fresh or frozen)
2 eggs
Flour
Salt and pepper
Canola oil for frying

Wash the calamari, defeats the rubber band effect some fried calamari tends to have, drain and dry them well.
In a bowl, mix together the eggs. In another bowl pour the flour, the salt, the pepper then mix.
Heat the oil, once the oil is hot, soak the calamari on by on in the flour, then in the eggs, then again in the flour. Drop them into the oil until they’re golden-brown.

Serve them with lemon and mayonnaise. Enjoy!
