Burger buns

Total time: 40 min then 3h of rest
Servings: 12 buns

A good burger or a good slider often relies on the quality of its bun. This recipe is not a fast and last minute one. You will need at least 3h of rest and around 4 hours in total of preparation.

600 grs of flour
25 grs of instant yeast
180 ml of milk
150 ml of water
1 tbsp of sugar
1 tsp of salt
1 egg + 1 egg yolk
30 grs of butter
sesame seeds or other

how-to

In the bowl of a stand mixer, mix the flour, the yeast, sugar and the salt. Then combine the milk, the water, the egg and the butter. Mix on low speed until incorporated. The dough should clear the bowl and is only slightly sticky when being touched. Knead until smooth and elastic. Gather dough into a ball and place in a greased bowl and put in a warm place and allow to rise until doubled, 2 hours.

Punch down dough and let rest for a few minutes. Divide dough into 12 equal pieces and shape into balls. Place on a sheet pan lined with parchment paper. Let it rise for 1 hour. Then stir together the egg yolk with 1 teaspoon of water and brush it evenly and put sesame seeds over the top of each bun.

Heat your oven to 200°C. Put inside the oven a small container of water to humidify during the baking. Bake the buns during 15 to 20 minutes until golden brown. Let them cool on a wire rack.

Tips ! You can flavor your bun by incorporating pieces of olives, chorizo, bacon.
